Paleo Buns, Good For Your Tum!!

As a food enthusiast I get so excited about new recipes and I create an absolute havoc in the kitchen!!

I have altered it slightly as I don't like the taste of psyllium husk, although the recipe is very similar to his. 

You can make them sweeter and add in some sultanas and cinnamon for a hot cross bun version or keep this plain and simple for rolls and burger buns!

3 1/2 cups almond meal
Heaped 1/4 cup psyllium husks
1 tablespoon coconut flour
1 tablespoon bicarbonate of soda
½ teaspoon sea salt
5 tablespoons apple cider vinegar
2 1/2 teaspoons honey
375 ml (1 ½ cups) boiling water
6 egg whites, whisked

 

  1. Preheat the oven to 180°C and line a baking tray with baking paper.

  2. Place the dry ingredients in a large bowl and mix well.

  3. Combine the vinegar, honey and boiling water in a glass jug.

  4. Fold the eggwhites into the dry ingredients. Pour in the vinegar mixture and stir vigorously. The mixture will froth up. Keep mixing for 30 seconds until it forms a very thick batter. Knead with your hands until the batter becomes sticky dough.

  5. Working quickly so the dough doesn’t dry out, divide into eight portions and shape into balls, then place on the prepared tray, a few centimetres apart. Bake in the oven for 50 minutes until golden brown and a roll sounds hollow when the base is tapped. Allow to cool on a wire rack before serving.

    Store in an airtight container in the fridge for up to 5 days, or in the freezer for up to 3 months

This Paleo Bun Recipe is not one of my own, but inspired by Chef Pete Evans... Yes I own nearly all of his cook book collection paleo or not paleo they are all delicious!! I went to a Paleo Way seminar a couple of years ago and met him, his words were inspirational and he told me to always cook with love!


Ever since i have admired his work and read and learnt a lot from the people he admires and the books he also recommends.
