What You Need
What to Do
-FEEDS 4 PEOPLE-
4 Medium Zucchinis Julieanned or Sliced Thin (remove seeds if you would like less this less sloshy)
1/4 Onion Diced
3 Free Range Chicken Breasts Cut into 2cm pieces
3 Rashers of Free Range Bacon Diced
1/3 Cups of Finely Grated Parmesan Cheese
1 Egg and 3 Egg Yolks whisked
(mix Parmesan into egg mixture)
*left over whites can be used for an omelette
Heat pan and cook up bacon pieces until lightly brown adding in onion and then chicken and stir fry until brown
Add zucchini on a high heat and use tongs to move around the pan quickly
when cooked turn down heat to very low or off AND STRIR THROUGH EGG MIXTURE
SERVE AND ENJOY

With carotenoids high in Vitamin A; Lutein and Zeaxanthin Zucchini can also help improve your eye sight
Zucchini can be eaten cooked or raw eaten with hummus or guacamole or used in a salad brushed with a little olive oil.
